On snowy days like today, my stomach just isn’t satisfied! All I want to do is eat and of course it’s not the healthy options that I crave either! Sometimes I just feel like yelling at my stomach….STOP IT! YOUR NOT HUNGRY, YOUR JUST BORED! I remember growing up, after a long day of playing in the snow, my mom would make us a bowl of tomato soup and a grilled cheese sandwich with double cheese (YUM)! As much as I would love to have that buttery cheesy goodness, it’s just not ideal. Instead I make sure that I drink plenty of water because sometimes dehydration can be mistaken for hunger. I keep lots of healthy snacks on hand, like almonds or kale chips (lightly salted of course).
I completed a 5 day clean eating challenge with a friend of mine (she is an amazing Beach Body Coach….Thanks Mandi) and on her menu she had these peanut butter energy bites which were absolutely amazing! I make sure that I have a supply of those in my fridge almost every week. I did however, put my own twist on the receipe….CHOCOLATE (just a little)! With the chocolate added these little golf-ball sized pieces of heaven are both a comfort food and a sweet treat for me. Below is the recipe:
1 Cup Rolled Oats
1/2 Cup Peanut Butter
1/3 Cup Honey or Agave Nectar
1 Cup Unsweetened Coconut Flakes
1 tsp Vanilla Extract
1/2 Cup Semi Sweet Mini Chocolate Chips
Combine all ingredients in a mixing bowl. Chill for 30 minutes, then roll into golf-ball sized balls. Store in an airtight container in the refrigerator for up to a week.
